I looked at some other support topics and deleted some plugins. When that happened, the payment amounts finally updated, but that’s the only time they’ve updated.

Do data stopped updating just for one day, or has it been going on for several days?If you have nothing to lose (especially if you don’t have a visits time limit), you could consider manually reimporting Analytics data, which usually acts as a reset button for Analytics and helps with this kind of issues.
